Beef and Barley Soup

ingredients

  • ½ lb. Lean Ground Beef 
  • ½ cup chopped onion 
  • 1 clove garlic – minced 
  • 48 oz. Beef Broth (or 7 cups water & 2 beef bouillon cubes) 
  • ½ cup Barley, uncooked 
  • ½ cup sliced celery 
  • ½ cup sliced carrots

Cooking instructions

  1. Brown Ground Beef in a 4 Qt sauce pan. 
  2. Add onion and garlic; cook until onion is tender. Drain. Stir in remaining ingredients. 
  3. Cover, bring to a boil then reduce heat and simmer for 50-55 minutes, stirring occasionally. Additional water can be added if soup becomes too thick upon standing. 
  4.  Add Salt & Pepper to taste in bowl.
