Greek Meatballs with avocado tzatziki sauce

ingredients

  • 1lb Ground Beef  
  • 1 tbsp 15 gm red onion 
  • 1 Avocado
  • 1 tsp Cilantro 
  • 1 tbsp Dill, fresh 
  • 4 clove(s) Garlic
  • 1/2 lemon peel, whole zest
  • 1 tbsp Oregano, fresh 
  • 1/2 Red onion, medium 
  • 1 lemon, juiced
  • 1 tsp Black pepper 
  • 1 tsp Salt 
  • 1 Cucumber (cut in half and seeds scraped out with a spoon) 
  • 1/2 tsp Cumin

Cooking instructions

  1. For the meatballs: Preheat oven to 350°F. 
  2. Combine beef, 1/2 red onion, 2 garlic cloves, lemon zest, oregano, coriander, cumin, 1/2 tsp salt and 1/2 tsp pepper together and form into approximately 1-1/2 to 2 inch balls.   
  3. Place on a raised edge baking pan and bake for 25 minutes.   
  4. For the Avocado Tzatziki Sauce: Combine avocado, cucumber, remaining garlic and red onion, lemon juice, dill, sour cream, 1/2 tsp salt and 1/2 tsp pepper in a food processor or blender. Blend until smooth and creamy.   
  5. Serve with avocado tzatziki sauce and enjoy!
  6. Note: I serve this with a tossed salad of cubed avocado, english cucumber, roma tomatoes, red onion, cilantro, lemon juice, salt and pepper.
